- 2 poblano chillies, dry roasted
- 1 jalapeno chilli, dry roasted
- 2 tomatoes, chopped
- ½ onion, sliced
- 2 cloves garlic, chopped
- ¼ tsp cumin seeds, dry roasted
- ¼ tsp dried oregano
- 4 tbsp chicken stock
- 1 tsp olive oil

Recipe
- Peel and seed the poblano chillies with a spoon, and seed the jalapeno.
- Put the chillies, tomatoes, onion, garlic, cumin seeds, and oregano into a blender and process until thoroughly combined.
- Pour in the chicken stock and olive oil, season to taste with salt, and briefly blend again. If the mixture is too thick, add a little bit of water.
- Taste and adjust the seasoning, if necessary, before serving.
