Barbecue Marinade Throw your own BBQ, Mexican style, with this marinade that's great for beef, lamb, pork, and other BBQ meats:

Ingredients

  1. Put the chillies into a small bowl, add enough boiling water to cover, and soak for 15 minutes. Drain and reserve the cooking liquid.
  2. Put the chillies in a blender with the cumin seeds, oregano, allspice berries, cloves, and garlic. Process until smooth, adding the soaking liquid as required.
  3. Salt to taste.
