- 6 ancho chillies, dry roasted
- 6 guajillo chillies, dry roasted
- ¼ tsp cumin seeds, dry roasted
- ¾ tsp dried oregano
- 5 allspice berries, dry roasted
- 3 whole cloves, dry roasted
- 2-3 cloves garlic, dry roasted
- Salt
Recipe
- Put the chillies into a small bowl, add enough boiling water to cover, and soak for 15 minutes. Drain and reserve the cooking liquid.
- Put the chillies in a blender with the cumin seeds, oregano, allspice berries, cloves, and garlic. Process until smooth, adding the soaking liquid as required.
- Salt to taste.
