Raw Green Salsa
From 'Tacopedia' by Deborah Holtz and René Redzepi Combining chillies and tomatillos, this Raw Green Salsa (or Salsa Verde) will enhance the taste of your recipes, such as Enchiladas. Great as half of a divorced recipe:

- 4 green serrano chiles, roughly chopped
- 6 large tomatillos, husked and quartered
- ½ medium onion, quartered
- 1 sprig coriander
Recipe
- Grind all the ingredients in the blender, adding a little water and salt as needed, until you have a smooth salsa.
- Once all the ingredients are blended, add a little extra chopped onion, cilantro leaves, and two mint leaves. Blend again and serve.
- Add the juice of half a lime.
- Add cubes of avocado to the salsa just before serving.
