Guacatillo
From 'The Road to Mexico' by Rick Stein
This sauce is a combination of guacamole and tomatillo salsa to make a brand new sauce with a unquie flavour profile (and a fun name too!):Ingredients
- 6 tomatillos, fresh or tinned
- 2 large, very ripe avocados, stoned and peeled
- ½ onion, very roughly chopped
- 1-2 green jalapeno or serrano chillies
- Small handful coriander
- 1 garlic clove, peeled and bashed
- Juice of 1 lime
- ½ tsp salt
Recipe
- If using tinned tomatillos, drain them first.
- Put all the ingredients in a blender and whizz to a smooth sauce.
- Add a little more lime juice or water if needed to get the desired consistency.
- Serve with your favourite meals.
