Potato Tacos These tacos are simple, easy, and vegan friendly!

  1. Heat 2 tablespoons of the oil in a saucepan over a medium heat. Add the onion and cook over a low heat, stirring occasionally, for 10 minutes or until translucent.
  2. Add the chillies and cook for another few minutes.
  3. Add the mashed potatoes and heat through. Season with salt to taste and remove the pan from the heat.
  4. Warm the tortillas by placing them in a dry frying pan and flipping them continuously until they are soft. Keep them warm in a tortilla warmer.
  5. Fill each tortilla, fold in half, and lightly cook on a grill pan over a medium heat.
  6. Serve with salsa verde.
