- 500g oyster mushrooms, sliced
- 1 jar Mama Reyna Guajillo Salsa
- 1 medium onion, thinly sliced
- 2 large cloves garlic, mashed or finely chopped
- 40ml vegetable oil
- 1 dry guajillo chilli, sliced
- Salt and pepper
- Coriander leaves, to garnish
Recipe
- Fry the sliced onion, garlic, and guajillo chilli (save a few pieces for garnish) in a non-stick frying pan for 3 minutes, or until slightly golden.
- Add the oyster mushrooms, lower the heat and stir. Leave to cook for 5 minutes, stirring occasionally.
- Pour in the entire jar of Mama Reyna Guajillo Salsa, stir gently, and cover until it starts bubbling.
- Garnish with the coriander and the remaining guajillo slices. Serve with rice, pasta, quinoa, or cous cous.
