Setas These mushrooms are mixed in with Guajillo salsa to give them a smoky spiciness. And not only is this recipe vegetarian, it's vegan friendly too!

  1. Fry the sliced onion, garlic, and guajillo chilli (save a few pieces for garnish) in a non-stick frying pan for 3 minutes, or until slightly golden.
  2. Add the oyster mushrooms, lower the heat and stir. Leave to cook for 5 minutes, stirring occasionally.
  3. Pour in the entire jar of Mama Reyna Guajillo Salsa, stir gently, and cover until it starts bubbling.
  4. Garnish with the coriander and the remaining guajillo slices. Serve with rice, pasta, quinoa, or cous cous.
