Flamin' Hot Tamales

Flamin' Hot Tamales Add some Flamin' Hot flavour to your tamales with this cheesy Cheetos recipe.

Ingredients
  • 1 single-serve bag Cheetos Crunchy Flamin’ Hot, finely ground
    • Plus extra for garnish
  • 180g masa harina flour
  • ½ tsp salt
  • 1½ tsp baking powder
  • ¼ tsp cayenne pepper
  • 60g butter, melted
  • 400ml boiling vegetable stock
  • 1 tbsp lime juice
  • 1 tsp line zest
  • 10 dried corn husks, soaked in water for 1 hour
  • 450g pepper jack cheese, grated
  • Sliced avocado, to serve
 
Recipe
  1. In a large bowl, use a mixer to combine the ground Cheetos (Cheetle), masa harina, salt, baking powder, and cayenne until well combined.
  2. On a medium speed, mix in the butter, vegetable stock, and lime juice and zest.
  3. Turn the mixer to a high speed and mix for about 2 minutes, until the masa is nice and fluffy.
  4. Divide the masa equally between the corn husks. Spread the masa out into a 5-inch square stretching from the broad edge of the husk to ¾ of the way to the top; and centred from side-to-side. Make sure the thickness is even.
  5. With 45g of the cheese, squeeze it into a 4-inch long tube. Place it in the centre of the masa, and roll the masa around the cheese.
  6. Roll the corn husk up, and tie the top of the tamale off about 2 inches from the top with a thin strips of corn husk.
    1. Repeat steps 5 & 6 for all the individual tamales.
  7. Steam the tamales in a steamer for 20 minutes.
  8. Turn off the heat and let the tamales rest for 10 minutes.
  9. Serve with avocado slices and a sprinkling of Cheetle.
