Bean and Cheese Tacos This vegetarian taco recipe is one of many that proves tacos are for everyone, reguardless of dietry requirements.

  1. Put the chillies in a small bowl, add enough hot water to cover, and soak for 15 minutes.
  2. Heat 2 tablespoons of the oil in a saucepan. Add the onion and cook over a low heat, stirring occasionally, for 5 minutes.
  3. Add the garlic, chillies, and cumin seeds and cook for another few minutes.
  4. Add the beans, mash well, and cook for another 5 minutes, stirring occasionally. Remove the pan from the heat.
  5. Heat the remaining oil in a frying pan. Fold the tortillas in half and add to the pan, in batches if necessary (add more oil to the pan between batches if necessary). Cook on both sides until they are a little crispy, then remove with a spatula, opening them up a little so the sides don’t stick together, and drain on paper towels.
  6. Fill the tortillas with the beans and top with the cheese. Serve immediately.
