Fava Bean Patties

Fava Bean Patties There is a large amount of flavour in these small bites! Great for adding an extra level to a complex meal.

Ingredients
  • 225g cooked fava beans, drained
  • 250g cooked chickpeas, drained
  • 2 eggs, lightly beaten
  • 3 tbsp corn oil, plus extra for frying
  • ¼ white onion, finely chopped
  • 1 tomato, chopped
  • 4 courgettes, finely chopped
  • Salt
 
Recipe
  1. Put the fava beans and chickpeas into a blender and process to a coarse paste. Add a little water if necessary.
  2. Transfer to a bowl, add the eggs, and season with salt. Mix well and set aside.
  3. Heat the oil in a large frying pan over a medium heat. Add the onion and tomato and cook for 10 minutes.
  4. Add the courgettes, season with salt and pepper, and simmer for 5-10 minutes, or until the moisture has evaporated. Check the seasoning and remove from the heat.
  5. Add the bean mixture and mix well.
  6. Take two tablespoons of mixture, roll it into a ball and flatten it into a patty. Repeat until all the mixture is used.
  7. Put enough corn oil in a heavy saucepan to cover the bottom. Place the pan over medium heat and cook the patties in small batches on both sides for 2-3 minutes, or until slightly brown. Remove with a slotted spoon and drain on paper towels; then serve.
