Fava Bean Patties

Ingredients
- 225g cooked fava beans, drained
- 250g cooked chickpeas, drained
- 2 eggs, lightly beaten
- 3 tbsp corn oil, plus extra for frying
- ¼ white onion, finely chopped
- 1 tomato, chopped
- 4 courgettes, finely chopped
- Salt
Recipe
- Put the fava beans and chickpeas into a blender and process to a coarse paste. Add a little water if necessary.
- Transfer to a bowl, add the eggs, and season with salt. Mix well and set aside.
- Heat the oil in a large frying pan over a medium heat. Add the onion and tomato and cook for 10 minutes.
- Add the courgettes, season with salt and pepper, and simmer for 5-10 minutes, or until the moisture has evaporated. Check the seasoning and remove from the heat.
- Add the bean mixture and mix well.
- Take two tablespoons of mixture, roll it into a ball and flatten it into a patty. Repeat until all the mixture is used.
- Put enough corn oil in a heavy saucepan to cover the bottom. Place the pan over medium heat and cook the patties in small batches on both sides for 2-3 minutes, or until slightly brown. Remove with a slotted spoon and drain on paper towels; then serve.
