Breakfast Quesadillas

Breakfast Quesadilla This recipe takes its inspiration from the popular video game Overwatch. In the lore of the game, this dish is the breakfast of choice for Reaper, who would like to spice up this vegetarian recipe by adding in some chorizo.

Ingredients
  • 2 eggs
  • Pinch of salt and pepper
  • ½ cup tinned black beans, rinsed and drained
  • 2 tbsp unsalted butter
  • 2 x 10 inch flour tortillas
  • ½ cup grated cheddar cheese, divided
  • ½ avocado, diced
  • 1 tbsp chopped green onion
  • 1 tbsp coriander, finely chopped
  • Chilli sauce (Reaper would definitely go for El Yucateco Black Label)
  • Chorizo (optional)
 
Recipe
  1. Beat the eggs with the chilli sauce in a small bowl.
  2. Add the salt and pepper to taste, then add the black beans.
  3. Melt the butter in a frying pan over medium heat. Add the egg mixture and cook for a few minutes, stirring constantly, until the eggs are cooked but not hard. Transfer the cooked eggs into a clean bowl.
  4. In a clean frying pan, heat one of the tortillas over medium heat. Spread it with half of the cheese and let the tortilla cook in the pan until the cheese has melted.
  5. Spread the cooked eggs evenly over the cheese, and sprinkle on a layer of avocado, green onion, coriander, and chorizo (if using).
  6. Sprinkle the rest of the cheese on top of the quesadilla, and then place the second tortilla on top, pressing down slightly.
  7. Reduce the heat in the pan a little and cook the quesadilla on both sides for a minute or so, until golden and crispy. Transfer the quesadilla to a cutting board and chop into triangles.
