Cheese in Green Salsa The Spanish name for this recipe, Queso Corazon en Salsa Verde, literally translates to Heart Cheese in Green Salsa; which perfectly decribes every element of this dish.

  1. Put the tomatillos, garlic, onion, and chillies into a blender and process until smooth.
  2. Pour the sauce into a saucepan and simmer for 7 minutes.
  3. Heat a frying pan over a high heat. Using a heart-shaped cookie cutter, cut the slices of cheese and fry them for 3 minutes on each side, or until browned.
  4. Ladle the sauce onto a plate, position the cheese, and garnish with tortilla strips, chives, and fried tomato skins. Serve immediately.
