Tacos de Lengua

Tacos de Lengua These Beef Tongue Tacos are a street food classic served all across Mexico.

  1. In a large pot, combine the tongue, onion, garlic, bay leaves, coriander seeds, and ancho chillies. Add water to cover by at least 1 inch. Bring to a boil and cook for 15 minutes, then reduce the heat to simmer and cook for 45 minutes. Add the salt to taste.
  2. Remove from the heat and let the tongue rest in the liquid for 20 minutes.
  3. When cool enough to handle but still hot, remove the tongue from the liquid and peel the outer layer with your hands.
  4. Cut the tongue into 1 inch pieces.
  5. Place a large cast-iron frying pan over high heat. Add the salsa and tongue and fry until golden brown, about 5 minutes.
  6. Transfer to a serving plate and lay out with the coriander, white onion, and limes. Set out the tortillas and let everyone assemble their own tacos.
