Beef Tacos

Beef Tacos A key ingredient from this recipe has been changed, as the originally called for 'taco shells' but that doesn't make a real taco! So of course we've replaced them with the real deal, corn flour tortillas.

Ingredients
  • 1 tbsp oil, to fry
  • 1 onion, chopped
  • 2 cloves garlic, finely chopped
  • 500g beef mince
  • 3 tsp chilli powder
  • 1 tsp paprika
  • 400g red kidney beans, rinsed and drained
  • 2 tbsp tomato puree
  • 2 tomatoes, chopped
  • 1 beef stock cube
  • Salt and pepper
    • For the Salsa
  • 5cm cucumber, cubed
  • 2 tomatoes, chopped
  • 1 small red onion, chopped
  • Juice of ½ lemon
  • 1 tbsp olive oil
  • Salt and pepper
  • ½ tsp paprika
    • To Serve:
  • ​​​​​​​8 corn tortillas
  • 2 little gem lettuce
  • Sour cream
 
Recipe
  1. Preheat the oven to 180°C.
  2. Make the beef filling:
    1. ​​​​​​​Heat the oil in a frying pan or wok. Fry the onions and garlic until the onions begin to soften.
    2. Add the meat and cook until no longer pink.
    3. Add the rest of the ingredients with a splash of water and simmer for 10 minutes.
  3. Mix the salsa ingredients together.
  4. Cut the lettuce into thin strips.
  5. Warm the corn tortillas.
  6. Construct the tacos with a layer of beef, lettuce, salsa, and top with sour cream.
