Chicharron Tacos

Chicharron Tacos From 'Comida Mexicana' by Rosa Cienfuegos

A common breakfast taco in Mexico, don't be surprised if taco stall are sold out of them by lunch time.


Ingredients: Recipe:
  1. Drain and rinse the tomatillos. Place them in a saucepan with the onion, chillies, coriander, salt, and 500ml water. Bring to the boil, then reduce the heat and simmer for 5 minutes.
  2. Drain, then transfer the ingredients to a blender and blend to make a smooth green salsa.
  3. Heat the oil in a frying pan over a low heat for 3 minutes. Add the salsa and cook for 5 minutes, stirring frequently.
  4. Add the chicharron and stir to combine with the salsa until it is soft and completely coated.
  5. Divide the chicharrons and salsa among the tortillas and serve.
