Chicharron Tacos
From 'Comida Mexicana' by Rosa CienfuegosA common breakfast taco in Mexico, don't be surprised if taco stall are sold out of them by lunch time.
Ingredients:
- 500g tomatillos
- ½ white onion
- 3 jalapeno peppers
- 1 bunch coriander, leaves picked
- 1 tsp salt
- 2 tbsp vegetable oil
- 500g chicharron
- Tortillas
- Drain and rinse the tomatillos. Place them in a saucepan with the onion, chillies, coriander, salt, and 500ml water. Bring to the boil, then reduce the heat and simmer for 5 minutes.
- Drain, then transfer the ingredients to a blender and blend to make a smooth green salsa.
- Heat the oil in a frying pan over a low heat for 3 minutes. Add the salsa and cook for 5 minutes, stirring frequently.
- Add the chicharron and stir to combine with the salsa until it is soft and completely coated.
- Divide the chicharrons and salsa among the tortillas and serve.
