Pork Ribs in Mango and Tequila sauce From 'Mexico The Cookbook' by Margarita Carrilo Arronte

These pork ribs get a unique flavour blending the fruitiness of the mango and the kick of the agave. The added sweetness from the honey and the spiciness from the chillies turn this sauce into stand out flavour profile.

Ingredients:

  • 1 tbsp corn oil or lard
  • 1.5kg meaty pork ribs, cut into individual ribs
  • Salt and pepper
  • 25g coriander, finely chopped
    • For the Sauce
  • 1 mango
  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 2 tbsp fresh ginger, chopped
  • 2 tbsp ketchup
  • 1 clove garlic, chopped
  • 2-3 smoked chipotle chillies in adobo
  • 2 tbsp white tequila

Recipe:

  1. Put the mango, lemon juice, honey, ginger, ketchup, garlic, chillies, and tequila into a blender and process until smooth. Season to taste with salt and pepper and set aside.
    1. Preheat the oven to 190°C/Gas Mark 5.
  2. Heat the oil in a saucepan. Add the ribs to the pan and sear over high heat. Do this in batches so you only have one layer of ribs in the pan at a time.
  3. Transfer the ribs to a roasting pan. When all the ribs have been seared, add half the sauce and mix well.
  4. Put the ribs into the oven, covered with foil and cook, basting with the sauce several times, for 1 hour.
  5. Remove the roasting pan from the over and transfer the ribs to a serving plate.
  6. Pour the remaining sauce and a couple of tablespoons of water into the roasting pan and set over medium heat, stirring and scraping the sediment on the bottom of the pan. Strain into a sauceboat, discarding the contents of the strainer.
  7. Sprinkle the ribs with the coriander and serve, handing the remaining sauce around separately.
