Pork Ribs in Orange Sauce

Pork Ribs in Orange sauce From 'Mexico The Cookbook' by Margarita Carrilo Arronte

This marinade adds a dash of sweetness to the ribs. Whilst the marinade is quick and simple to prepare, the cooking time of the ribs gives it time to be properly infused into the meat.

Ingredients:

  • 2kg pork ribs, cut into 6 portions
  • 275g orange marmalade
  • 5 tbsp borracha salsa
  • 2 tbsp light Mexican beer
  • 2 tbsp honey
  • 1½ tsp grated orange zest
  • Salt and pepper
  •  

Recipe:

  1. Preheat the oven to 180°C.
  2. Season the ribs generously with salt and pepper and put them into a large roasting pan.
  3. Combine the marmalade, salsa, beer, honey, and orange zest in a large saucepan and cook over a low heat, stirring continuously, for 5 minutes.
  4. Pour the hot mixture over the ribs.
  5. Cover the pan with foil, put it in the oven, and cook for about 45 minutes.
  6. Remove the pan from the oven, remove the foil, then return to the oven and cook for an additional 10-15 minutes, until browned.
  7. Serve immediately.
