Pork Tacos with Spicy Apricot Glaze Tacos From 'The Mexican Wrestler's Cookbook' by Cardenas & Bell

These pork tacos have a flavourful belnd of fruity and fiery flavours.


Ingredients:
  • 350g pork steaks
  • ½ tsp cumin
  • 4 tsp chipotle sauce
  • 2 tbsp olive oil
  • 6 arbol chillies, deseeded, soaked, and finely chopped
  • 4 red onions, cut into strips
  • 2 cloves garlic
  • 1 beef stock cube
  • 3 tbsp apricot preserves
  • Juice of ½ lime
  • 2 tsp corn starch, mixed with some water
  • Corn tortillas
  • Lettuce, to garnish
  • Avocado, to garnish
  • Radish, to garnish
Recipe:
  1. Flatten the pork and slice into strips. Marinade in the garlic, cumin, olive oil, chipotle sauce, apricot, arbol chillies, and seasoning.
  2. Heat some oil in a pan. Stir fry the onions for a few minutes.
  3. Add the marinated meat to the pan and fry until cooked.
  4. Add the stock and thicken with corn starch.
  5. Warm the tortillas, and keep warm in a tortilla warmer until serving.
  6. Serve the meat in the tortillas and garnish with the lettuce, avocado, and radishes.
