Pork Tacos with Spicy Apricot Glaze

Ingredients:
- 350g pork steaks
- ½ tsp cumin
- 4 tsp chipotle sauce
- 2 tbsp olive oil
- 6 arbol chillies, deseeded, soaked, and finely chopped
- 4 red onions, cut into strips
- 2 cloves garlic
- 1 beef stock cube
- 3 tbsp apricot preserves
- Juice of ½ lime
- 2 tsp corn starch, mixed with some water
- Corn tortillas
- Lettuce, to garnish
- Avocado, to garnish
- Radish, to garnish
- Flatten the pork and slice into strips. Marinade in the garlic, cumin, olive oil, chipotle sauce, apricot, arbol chillies, and seasoning.
- Heat some oil in a pan. Stir fry the onions for a few minutes.
- Add the marinated meat to the pan and fry until cooked.
- Add the stock and thicken with corn starch.
- Warm the tortillas, and keep warm in a tortilla warmer until serving.
- Serve the meat in the tortillas and garnish with the lettuce, avocado, and radishes.
