30 Marias Gamesa Cookies, halved
220g cream cheese
3 tbsp peanut butter
55g heavy cream
1 tbsp sugar
55g cajeta; plus 3 tbsp slightly warm, to serve
55g peanuts, toasted and chopped
1 bunch bananas, sliced
Recipe
Mix the cream cheese, peanut butter, heavy cream, sugar, and cajeta until smooth.
Place half a Marias Gamesa Cookie on a plate, then top with a teaspoon of the peanut butter mixture, and a slice of banana. Repeat this process 2 more times, before closing the sandwich with another half Cookie.
Carefully flip the sandwich over, flat side down.
Repeat to make as many sandwiches as you can with the mixture.
