Escamochas

Escamochas A fruit salad with all the trimmings! A common breakfast treat perfect under the hot Mexican sun.

Ingredients
  • 150g watermelon, cut into chunks
  • 150g cantaloupe, cut into chunks
  • 150g golden delicious apple, cored and cut into chunks
  • 150g papaya, cut into chunks
  • 150g pineapple, cut into chunks
  • 4 strawberries, halved
  • 30g shredded coconut
  • 100g muesli
  • 80ml orange juice
  • 3 tbsp honey
  • 80g whipped cream, plus extra to serve
  • Chocolate sprinkles, to serve
Recipe
  1. Place all the fruit (apart from the strawberries) in a large bowl and mix to combine.
  2. Add 1 tablespoon of mixed fruit to eight tumblers, then sprinkle over a little coconut and muesli.
  3. Drizzle over a small amount of orange juice and honey, and add 2 teaspoons of whipped cream.
    1. Repeat this layering until all the ingredients have been used.
  4. Finish with a spoonful of whipped cream and perch a strawberry half on top.
  5. Scatter over a few chocolate sprinkles and serve immediately.
