Escamochas
From 'Comida Mexicana' by Rosa Cienfuegos A fruit salad with all the trimmings! A common breakfast treat perfect under the hot Mexican sun.
Ingredients
- 150g watermelon, cut into chunks
- 150g cantaloupe, cut into chunks
- 150g golden delicious apple, cored and cut into chunks
- 150g papaya, cut into chunks
- 150g pineapple, cut into chunks
- 4 strawberries, halved
- 30g shredded coconut
- 100g muesli
- 80ml orange juice
- 3 tbsp honey
- 80g whipped cream, plus extra to serve
- Chocolate sprinkles, to serve
- Place all the fruit (apart from the strawberries) in a large bowl and mix to combine.
- Add 1 tablespoon of mixed fruit to eight tumblers, then sprinkle over a little coconut and muesli.
- Drizzle over a small amount of orange juice and honey, and add 2 teaspoons of whipped cream.
- Repeat this layering until all the ingredients have been used.
- Finish with a spoonful of whipped cream and perch a strawberry half on top.
- Scatter over a few chocolate sprinkles and serve immediately.
