Guava Paste

Guava Paste Normally made at the end of the fruit season when there is an abundance of overripe fruit, Ates are fruity pastes that can be eaten as bite-sized candies.

Ingredients
  • 910g ripe or overripe guavas, halved or quartered
  • 240ml water
  • 455g piloncillo, plus more if needed
 
Recipe
  1. In a blender, process the guavas and water for about 2 minutes. Strain into a pot.
  2. Add the sugar, adjusting the amount based on the sweetness of the fruit. It should be as sweet as jelly.
  3. Cook over a low heat, stirring often so the bottom does not scorch. Once you can see the bottom of the pot when stirring, after 45-60 minutes, pour into a mould.
  4. Let cool to room temperature before refrigerating overnight.
  5. Unmould and cut into squares to serve.
