Churros
From 'Overwatch: The Official Cookbook' by Chelsea Monroe-Cassel These sweet lengths of fried dough have a crispy exterior but a soft interior. Overwatch's reaper describes them as 'as sweet as revenge'.
Ingredients
- 100g sugar, plus 1½ tbsp more
- 1½ tsp ground cinnamon
- 2 tbsp vegetable oil, plus more for frying
- 1 cup water
- ½ tsp salt
- 136g plain flour
Recipe
- Combine the 100g sugar with the ground cinnamon in a shallow bowl and set aside for coating the churros.
- Line a plate with paper towels and set near the stove. Pour the vegetable oil into a medium saucepan, 2 inches deep. Heat the oil on a medium heat to 190°C
- Meanwhile, in a separate saucepan over a medium heat, combine the water, remaining sugar, salt, and 2 tbsp of vegetable oil, and cook until the sugar has dissolved, and the mixture is just about to boil.
- Remove from the heat and stir in the flour, mixing until smooth.
- Transfer the warm dough into a piping bag fitted with a large star tip.
- When the frying oil has reached temperature, hold the piping bag over the pot and squeeze out a length of the churros mix about 4 inches long, and snip it off with scissors so it falls into the hot oil. Do this with several churros at a time, frying for a couple of minutes until they’re golden brown on all sides.
- Remove the cooked churros to the plate lined with paper towels to drain, then roll them in the cinnamon sugar and serve.
