Governor Tacos

Governor Tacos From 'Mexico The Cookbook' by Margarita Carrillo Arronte

These tacos are named after the Governor of Sinaloa, and he described shrimp, melted cheese, tomatoes, and onions as good politics!

Ingredients:

  • 25g butter
  • 1 tbsp corn oil
  • 3 tomatoes, seeded and finely chopped
  • ½ onion, finely chopped
  • 400g raw shrimp, peeled and chopped
  • 2 tbsp coriander, chopped
  • 300g Chihuahua, Monterey Jack, or Cheddar cheese, grated
  • 12 corn tortillas
  • Melted butter, for brushing
  • Salt and pepper
  • Medium-hot chilli sauce, to serve

Recipe:

  1. Heat the butter and oil in a saucepan. Add the tomatoes and onion and cook over medium heat until dry.
  2. Add the shrimp, season with salt and pepper, and stir in the coriander.
  3. Once it has cooled down, add the cheese and stir.
  4. Warm the tortillas by placing them in a dry frying pan and flipping them over continuously until they are soft. Place them in a tortilla warmer until ready to serve.
  5. Fill each tortilla with the shrimp and cheese mixture, fold in half, brush with butter, and lightly cook on a ridged grill pan over a medium heat.
  6. Serve with the chilli sauce.
