Devilled Shrimp
From 'Mexico The Cookbook' by Margarita Carrillo Arronte
This recipe is too tempting to be ignored, its simply devilsih! These shrimp are so evil, as they'll keep you wanting more.
Ingredients:
- 275ml ketchup
- 4 black peppercorns
- 1 tsp apple cider vinegar
- 1 tbsp corn coil
- 70g butter
- 450g shrimp, peeled and deveined
- 4 arbol chillies, membranes and seeds removed and finely chopped
- Salt and pepper
Recipe:
- Put the ketchup, peppercorns, and vinegar into a blender and process until smooth. Strain into a bowl.
- Heat the oil and butter in a large saucepan over medium heat, add the shrimp, and cook for 2 minutes.
- Add the sauce together with the chillies and salt and pepper to taste.
- Cover, and reduce the heat to low and simmer for 10 minutes, then serve.
