In Mexico, you won't find this market speciality all year round. Luckily with a recipe of your own you can make it whenever you like.
Ingredients:
- 1 tsp garlic powder
- Salt and pepper, to taste
- 1kg firm white skinless fish fillets, cut into 12 strips
- Canola oil, for deep-frying
- 3 limes, halved
- Valentina Hot Sauce, to serve
- For the Batter:
- 110g flour
- 1 tsp baking powder
- ½ tsp salt
Recipe:
- Combine the Batter ingredients and 185ml water to reach pancake consistency, then set aside at room temperature for 30 minutes.
- Whisk again to fully incorporate the ingredients.
- Sprinkle the garlic powder, salt, and pepper over the fish.
- Heat enough oil for deep-frying in a large, heavy-based saucepan to 180°C.
- Dip the fish strips into the batter until completely coated.
- Working in batches, fry the fish for 5 minutes or until golden and crisp. Drain on a plate lined with a paper towel, then transfer to a serving dish.
- Serve with the lime halves for squeezing over, and a good drizzle of Valentina.
