Fish Bites From 'Comida Mexicana' by Rosa Cienfuegos

In Mexico, you won't find this market speciality all year round. Luckily with a recipe of your own you can make it whenever you like.

Ingredients:

  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 1kg firm white skinless fish fillets, cut into 12 strips
  • Canola oil, for deep-frying
  • 3 limes, halved
  • Valentina Hot Sauce, to serve
    • For the Batter:
  •  110g flour
  • 1 tsp baking powder
  • ½ tsp salt

Recipe:

  1. Combine the Batter ingredients and 185ml water to reach pancake consistency, then set aside at room temperature for 30 minutes.
  2. Whisk again to fully incorporate the ingredients.
  3. Sprinkle the garlic powder, salt, and pepper over the fish.
  4. Heat enough oil for deep-frying in a large, heavy-based saucepan to 180°C.
  5. Dip the fish strips into the batter until completely coated.
  6. Working in batches, fry the fish for 5 minutes or until golden and crisp. Drain on a plate lined with a paper towel, then transfer to a serving dish.
  7. Serve with the lime halves for squeezing over, and a good drizzle of Valentina.
