Tuna Cake

Tuna Cake From 'Mexico The Cookbook' by Margarita Carrillo Arronte

A great way to use canned tuna to get it full of flavour. Although this might not be the sort of cake you want for your birthday...

Ingredients:

  • 80g butter, plus extra for greasing
  • 4 slices stale white bread
  • 120ml milk
  • 4 eggs
  • 160g canned tuna, drained
  • 250g chihuahua cheese, grated
  • 2 pickled jalapenos, drained and chopped
  • Salt and pepper

Recipe:

  1. Preheat the oven to 190°C and grease an ovenproof dish with butter.
  2. Cut the crusts off the bread and discard. Crumble the bread into a bowl.
  3. Add the milk and stir to form a paste, then add the eggs, tuna, cheese, jalapenos, and salt and pepper to taste; and mix well.
  4. Mel the butter in a saucepan over a low heat, then add the mixture and beat until well combined.
  5. Pour the mixture into the prepared dish and bake in the oven for 1 hour 15 minutes, or until golden brown and soft.
  6. Let cool, then serve.
