Tuna Cake
From 'Mexico The Cookbook' by Margarita Carrillo Arronte
A great way to use canned tuna to get it full of flavour. Although this might not be the sort of cake you want for your birthday...
Ingredients:
- 80g butter, plus extra for greasing
- 4 slices stale white bread
- 120ml milk
- 4 eggs
- 160g canned tuna, drained
- 250g chihuahua cheese, grated
- 2 pickled jalapenos, drained and chopped
- Salt and pepper
Recipe:
- Preheat the oven to 190°C and grease an ovenproof dish with butter.
- Cut the crusts off the bread and discard. Crumble the bread into a bowl.
- Add the milk and stir to form a paste, then add the eggs, tuna, cheese, jalapenos, and salt and pepper to taste; and mix well.
- Mel the butter in a saucepan over a low heat, then add the mixture and beat until well combined.
- Pour the mixture into the prepared dish and bake in the oven for 1 hour 15 minutes, or until golden brown and soft.
- Let cool, then serve.
