Extra-spicy Wings
From 'Mexico The Cookbook' by Margarita Carrillo Arronte Make sure you have a glass of milk on hand when eating this recipe, it's extra-spicy and not for the faint-hearted.
Ingredients
- 1 tbsp ground black pepper
- ½ tsp garlic powder
- 2 cloves garlic, crushed
- 4 egg yolks
- 120ml hot chilli sauce
- 60ml tabasco sauce
- 1 tsp apple cider vinegar
- 120g plain flour
- 36 chicken wings
- Corn oil, for deep frying
- Salt
- Cheese sauce, to serve
Recipe
- Mix the pepper, garlic powder, crushed garlic, and salt together in a large bowl.
- Add half the egg yolks, the chilli and tabasco sauces, and vinegar and mix well to a thick consistency. If not, add the remaining egg yolks.
- Spread the flour out on a large plate. Put the chicken wing pieces into the bowl of mixture and coat; then add them to the flour and toss until coated all over.
- Heat the oil for deep frying to 180°C, or until a cube of day-old bread browns in 30 seconds.
- Carefully lower the wings into the hot oil a few at a time, and deep fry for 8 minutes, or until cooked through and golden brown. Remove and drain on paper towels, then continue with the remaining wings.
- Serve with a cheese sauce.
