Turkey Carnitas Tacos with Tajin Mojo

Turkey Carnitas Tacos with Tajin Mojo A perfect way to use up any left over turkey after a roast dinner, these tacos get a lot of flavour from the Tajin Mojo.

Ingredients
  • 140g leftover turkey meat, shredded with two forks
  • 235ml cooking oil
    • For the Tajin Mojo:
  • 4-6 cloves garlic
  • 118ml orange juice
  • 118ml olive oil
  • 1 tsp Tajin Chilli and Lime Seasoning
  • Pinch of salt
    • Taco Toppings (Optional)
  • Pico de Gallo salsa
  • Pickled onions
  • Coriander
  • Pomegranate seeds
  • Avocado
 
Recipe
  1. Crush together garlic cloves and salt with a molcajete into a paste, and put into a medium bowl.
  2. Stir in the orange juice, olive oil, and Tajin Seasoning to combine.
  3. Fold to Mojo into all of your shredded turkey meat.
  4. Heat the cooking oil in a large, heavy-bottomed pot over a high heat. Add the turkey, in batches, and stir often until the meat turns a light golden brown.
  5. Lower the heat to medium to prevent the meat form over darkening or burning.
  6. Warm the tortillas.
  7. Place the turkey into tortillas and top with your desired toppings before serving.
