Barbacoa Taquitos with Macha Salsa
Ingredients
For the Tacos:
- 19 tortillas made with Naturelo Harina De Maiz Blanco
- 1.3 pounds (approx. 590 grams) of beef or goat barbacoa
- Oil for frying
- Toothpicks
For the Macha Salsa:
- 3.5 ounces (approx. 100 grams) of árbol chillies, cleaned
- 1.75 ounces (approx. 50 grams) of sesame seeds
- 3 garlic cloves, sliced
- 1 cup of corn oil
- Salt to taste

Prepare the Taquitos:
Warm the tortillas made with Naturelo and fill each with barbacoa. Roll them to form the taquitos and use toothpicks in two tortilla sections to hold them together.
Trim the edges of the taquitos and then cut them in half. Set the taquitos aside to fry later. Ensure each taquito has one toothpick to hold its shape.

Prepare the Macha Salsa:
Heat half a cup of the oil over low heat and fry the garlic slices. Once they turn golden brown, add the sesame seeds and the chillies, stirring constantly. Remove from heat and transfer to a blender.
Before blending, add the remaining oil and season with salt to taste. Blend until smooth, and pour the salsa into a pan. Check the seasoning and add more salt if necessary. As soon as the salsa has warmed up, remove it from the heat.

Fry the Taquitos:
Fry the taquitos until crispy and golden. Arrange them on a platter with the macha salsa in the middle, serving it as an appetiser.
