Heat the oil in a large heavy-based saucepan over a medium-high heat to 180°C.
Cut the tortillas into 8 rough triangles then, working in batches, add the tortilla triangles to the hot oil and fry them for 3 minutes, turning them over until crisp and lightly golden.
Remove the tortillas using a slotted spoon and transfer to a large plate lined with paper towels to drain. Season with salt, to taste.
