Chipotles en Adobo These are a staple ingredient in many Mexican dishes, that's why we offer a range of ready-made varieties in our online store. However, there is something extra special about that homemade taste.

  1. Pour 475ml water and the vinegar into a saucepan, add the raw sugar, and stir over a low heat until it has dissolved.
  2. Add the garlic, mixed herbs, and chillies and bring to a boil, then reduce the heat and simmer for 15 minutes.
  3. Add the cinnamon, onions, clove, allspice, and peppercorns and simmer for 10 minutes.
  4. Add the oil, oregano, and a pinch of salt and simmer for another 10 minutes.
  5. Remove the pan from the heat, remove and discard the mixed herbs and cinnamon stick, and let the sauce stand for 2 hours. Store in the fridge.
