Nachos

Ingredients:
- Mi Adelita Stone Ground Tortilla Chips 150g
- 180g grated cheese
- For the Sauce
- 1 tbsp oil, for frying
- 1 onion, finely chopped
- 400g tinned tomatoes, chopped
- ½ tbsp tomato puree
- 1 tsp chilli flakes
- ½ tsp paprika
- 1 tsp sugar
- 2 tsp dried chives
- Preheat the oven to 220°C.
- Pile the chips on an ovenproof plate. Sprinkle the cheese in the top and cover the chips.
- Place in the oven for 2-3 minutes only; the cheese only needs to melt, it does not need to brown.
- For the Sauce:
- Heat a little oil in a saucepan and fry the onions and garlic in a pan until they begin to brown.
- Add the tomatoes and bring to the boil.
- Add the tomato puree, chilli, paprika, and sugar. Simmer gently for 3-4 minutes.
- Add the chives.
- Pour the sauce over the top, then serve immediately.
