Watermelon Agua Fresca

Watermelon Agua Fresca Agua Fresca can be made in a wide range of fruity flavours, but this recipe focuses on the distictive taste of watermelon.

  • 1.5kg watermelon
  • 1½-2 tbsp caster sugar
  • Juice of ½ lime
  1. Cut the watermelon into wedges. Remove the skin and as many of the big seeds as possible.
  2. Cut the melon flesh into cubes and blend with 150ml of cold water until smooth.
  3. Pass the mixture through a sieve, then stir in the sugar and lime juice to taste.
  4. Pour the agua fresca into a jug and refrigerate.
    1. It will separate but just stir it to bring it back together.
  5. Serve over ice.
