Hot Chocolate
From 'The Road to Mexico' by Rick Stein Legend says that Montezuma, King of the Aztecs, drank 50 golden goblets of hot chocolate everyday. Whilst this recipe won't quite make that many cups, feel like an Aztec King by frothing up your hot chocolate with a Molinillo.
Ingredients
- 550ml semi-skimmed milk (or water)
- 100g dark chocolate, 70% cocoa solids, chopped
- 1 tsp demerara sugar, to taste
- ½ tsp ground cinnamon (or infuse milk with a cinnamon stick)
Recipe
- Heat 150ml of the milk in a saucepan and add the chopped chocolate, sugar, and the cinnamon.
- Whisk until the chocolate has melted and the mixture is smooth.
- Add the remaining milk and continue to heat until it’s hot but not boiling, then serve.
