Charritos

Yucatan Charritos A simple snack that is great for sharing with friends and family. Best served covered in hot sauce and a squeeze of fresh lime.

  1. Heat the oil in a large, heavy-based saucepan over a medium-high heat to 180°C.
  2. Combine the masa flour, baking powder, salt, pepper, and lard in a large mixing bowl. Slowly add the warm water and mix until you have a soft and pliable dough.
  3. Working in batches, place the dough in a piping bag with a 5mm nozzle attached. Pipe out 5cm length charritos and place on a tray lined with baking paper.
  4. Working in batches, fry the charritos, turning occasionally, for 2 minutes until golden and cooked through. Transfer to a plate lined with a paper towel to drain.
  5. Leave the charritos to cool for at least 1 hour, then transfer to a serving bowl. Squeeze in the lime juice and toss through.
  6. Serve with plenty of hot sauce drizzled on top and on the side for dipping.
