Baked Banana with Crema & Cheese

Ingredients
- 6 heirloom bananas, ripe but not black, unpeeled
- 230g crema fraiche
- 120g crumbled queso fresco
Recipe
- Preheat the oven to 200°C.
- Place the whole bananas on a baking sheet and bake for 40 minutes; turning them every 10. The peel should be starting to split and the inside should be tender when tested with a skewer.
- Carefully slice the peel lengthwise to just reveal the flesh. Drizzle with some crema and sprinkle with cheese.
- Transfer to plates and serve, with the remaining crema and cheese on the side.
