Baked Banana with Crema & Cheese

Baked Banana Don't let the simplicity of this recipe fool you, the 3 ingredients combine perfectly to create a great tasting sweet treat.

Ingredients
  • 6 heirloom bananas, ripe but not black, unpeeled
  • 230g crema fraiche
  • 120g crumbled queso fresco
 
Recipe
  1. Preheat the oven to 200°C.
  2. Place the whole bananas on a baking sheet and bake for 40 minutes; turning them every 10. The peel should be starting to split and the inside should be tender when tested with a skewer.
  3. Carefully slice the peel lengthwise to just reveal the flesh. Drizzle with some crema and sprinkle with cheese.
  4. Transfer to plates and serve, with the remaining crema and cheese on the side.
