Mexican cuisine began about 9,000 years ago, it has influences from different Mesoamerican groups like Maya, Olmec, Teotihuacan, Toltec, Huastec, Zapotec, Mixtec, Otomi, Purhepecha, Totonac, Mazatec, Mazahua. The Aztecs took influences from all these groups and created a multi-ethnic society where many different styles became infused.
After the Spanish conquest of the Aztec Empire in the 16th century, Europeans introduced a large number of food, being rice, dairy products and meat from domesticated animals the most important. The Spanish tried to impose their own diet on the country, which was impossible.
Current Mexican people can feel proud of using ancestral cooking methods and ingredients.
