Machaca con Huevos

Machaca con Huevos Scrambled eggs are a big thing for breakfast in Mexico, and can be remixed with a number of different toppings. Dried meat called Machaca is a popular choice.

Ingredients
  • 80g Machaca
  • 1 tomato, finely chopped
  • 2 serrano chillies, finely chopped
  • 2 tbsp minced onion
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 6 eggs, beaten
  • Salt and pepper
 
Recipe
  1. Fry the tomato, serrano chillies, and onion in olive oil until soft.
  2. Add the butter and Machaca, and cook together for a minute.
  3. Stir in the eggs and scramble.
  4. Add salt and pepper to taste. Serve with toast and your favourite salsa.
