Huitlacoche & Goat's Cheese Omelette

Ingredients
- 12 eggs
- 4 tbsp olive oil
- Salt and pepper
- Chipotle salsa, to garnish
- For the Filling
- 2 tbsp butter
- ½ onion, finely chopped
- 250g huitlacoche
- 2 tbsp epazote, chopped
- 2 serrano chillies, membranes and seeds removed, finely chopped
- 150g fresh goat’s cheese, crumbled
- A pinch of salt
Recipe
- To make the filling, heat the butter in a saucepan.
- Add the onion and cook over low heat, stirring occasionally, for 5 minutes, until translucent.
- Add the huitlacoche, epazote, and chillies, and season with salt.
- Cook for 15 minutes, then taste and adjust the seasoning, if necessary, and fold in the cheese until it is completely incorporated. Remove the pan from the heat.
- To make the omelettes, beat the eggs with salt and pepper until fluffy.
- Heat 1 tablespoon of the oil in a frying pan over low heat.
- Pour in a small ladle of the beaten egg and tilt the pan to coat evenly.
- When the egg is just beginning to set, add a little of the filling on one half of the egg.
- Fold the empty half of the omelette over the filling and finish cooking,
- Transfer to a serving plate, add the salsa, and repeat with the remaining eggs. Serve immediately.
