Huitlacoche & Goat's Cheese Omelette

Huitlacoche Omelette Huitlacoche, Mexican Corn Truffles, are a delicacy in Mexico due to their unique culinary properties and high nutritional content. Mix them with eggs and goat's cheese in this delicious recipe for a nutritional breakfast.

  1. To make the filling, heat the butter in a saucepan.
  2. Add the onion and cook over low heat, stirring occasionally, for 5 minutes, until translucent.
  3. Add the huitlacoche, epazote, and chillies, and season with salt.
  4. Cook for 15 minutes, then taste and adjust the seasoning, if necessary, and fold in the cheese until it is completely incorporated. Remove the pan from the heat.
  5. To make the omelettes, beat the eggs with salt and pepper until fluffy.
  6. Heat 1 tablespoon of the oil in a frying pan over low heat.
  7. Pour in a small ladle of the beaten egg and tilt the pan to coat evenly.
  8. When the egg is just beginning to set, add a little of the filling on one half of the egg.
  9. Fold the empty half of the omelette over the filling and finish cooking,
  10. Transfer to a serving plate, add the salsa, and repeat with the remaining eggs. Serve immediately.
