Huevos Rancheros

Ingredients
- 8 x 15cm corn tortillas
- Oil, for frying
- 4-8 eggs (1 or 2 per person)
- 250g refried beans, pinto or black, warmed
- 60g Lancashire or Feta cheese, crumbled
- 1 tbsp chopped coriander
- For the Salsa Ranchero
- 1 medium onion
- 4 gloves garlic
- 2 green serrano or jalapeno chillies, stems removed, halved
- ½ tsp ground cumin
- 400g tin plum tomatoes
- ½ tsp salt
- 2 tbsp corn oil
Recipe
- For the salsa, put the onion, garlic, chillies, cumin, tomatoes, and salt into a blender and blitz into a smooth sauce.
- Heat the corn oil in a saucepan, then pour in the contents of the blender.
- Simmer for about 10 minutes, check seasoning and add a little more salt if required, then keep the sauce warm.
- Warm the tortillas in a dry frying pan.
- In a separate frying pan, heat some oil and fry the eggs.
- Place 2 overlapping corn tortillas on each plate, top them with refried beans, some of the ranchero sauce, and fried eggs.
- Add a scattering of crumbled cheese and chopped coriander, then serve immediately.
