Huevos Rancheros

Huevos Rancheros A common breakfast eaten on Mexican farms, Huevos Rancheros translates to Rancher Eggs.

  1. For the salsa, put the onion, garlic, chillies, cumin, tomatoes, and salt into a blender and blitz into a smooth sauce.
  2. Heat the corn oil in a saucepan, then pour in the contents of the blender.
  3. Simmer for about 10 minutes, check seasoning and add a little more salt if required, then keep the sauce warm.
  4. Warm the tortillas in a dry frying pan.
  5. In a separate frying pan, heat some oil and fry the eggs.
  6. Place 2 overlapping corn tortillas on each plate, top them with refried beans, some of the ranchero sauce, and fried eggs.
  7. Add a scattering of crumbled cheese and chopped coriander, then serve immediately.
