- 3 ancho chiles (1.5 ounces), seeded
- 2 small Chipotle Peppers in Adobo (or 1 for less heat)

- 1/3 cup Low-Sodium Chicken Stock
- 2 tablespoons Tajín Clásico

- 1 1/4 teaspoons Onion powder

- 2 1/2 lbs Bone-In, Skin-On Chicken Thighs
- 2 tablespoons Vegetable Oil
- Kosher Salt

- Bring 2 2/3 cups of water to a boil. Remove from heat and add the ancho chiles. Let them soak for 20 minutes to soften.
- Blend the ancho chiles and chipotle peppers in the soaking liquid in a blender on high speed for 30 seconds until smooth. Strain the mixture through a fine-mesh sieve back into a saucepan, pressing on any solids to extract maximum flavour.
- Whisk in Tajín Clásico and the rest of the sauce ingredients. Bring to a simmer over medium-low heat. Cook, stirring occasionally, for 30 minutes. Adjust the salt to taste.
- Let the sauce cool to room temperature and store it in a sealed container. It can be used immediately or stored in the fridge for up to 2 weeks; the flavours enhance if made a day ahead. Reserve 1 cup of the Tajín Chipotle BBQ sauce for basting the chicken thighs.
