Ingredients
For the Chicken:
- 500g boneless, skinless chicken thighs, shredded
- 1 tablespoon olive oil
- 1 teaspoon ground cumin

- 2 tablespoons tomato paste
- 1 tablespoon honey
- Juice of 1 lime
- Salt to taste
For the Tostadas:
- 8 small tostada shells
- 1 cup refried beans
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup sliced black olives
- 1/2 cup crumbled queso fresco or feta
- Fresh cilantro leaves for garnish
- Lime wedges for serving
Instructions
Cook the Chicken:
In a pan, heat olive oil over medium-high heat. Add shredded chicken, ground cumin, smoked paprika, garlic powder, salt, and pepper. Cook until the chicken is fully cooked and has a nice golden brown colour. Set aside.
Prepare the El Yucateco Habanero & Coffee Sauce:
