La Medida Tobasiche is made with agave Tobasiche in Miahuatlan de Porfirio Diaz, Oaxaca. While each batch may vary, at least one batch was made by Jose Diaz Bustamante. Jose cooks his agave in an underground pit oven, crushes the cooked agave with a tahona, ferments with open air yeasts in wooden vats, and distills in a copper refrescadera. Other batches may be produced by other mezcaleros depending on where they are purchased.
