Potatoes in Garlic

Potatoes in Garlic Sometimes, the best recipes are the simplest; and these simple potatoes are full of flavour making them a great addition to any meal.

Ingredients
  • 3 tbsp olive oil
  • 4 cloves garlic, finely chopped
  • 750g new potatoes, cooked
  • 1 tsp ground cumin, toasted
  • Mild chilli, to serve
  • Salt
 
Recipe
  1. Heat the olive oil in a pan over a medium-low heat. Add the garlic, stirring frequently, for a few minutes until golden. Do not let it brown else it will become bitter.
  2. Put the potatoes into a bowl, add the garlic and the oil from the pan, and mix well.
  3. Sprinkle with the cumin and mix again.
  4. Put the potatoes under the grill for 5 minutes.
  5. Put the potatoes into a serving dish, sprinkle with salt, mix well, and garnish with a chilli.
  6. Serve immediately.
