Potatoes in Garlic
From 'The Road to Mexico' by Rick Stein Sometimes, the best recipes are the simplest; and these simple potatoes are full of flavour making them a great addition to any meal.
Ingredients
- 3 tbsp olive oil
- 4 cloves garlic, finely chopped
- 750g new potatoes, cooked
- 1 tsp ground cumin, toasted
- Mild chilli, to serve
- Salt
Recipe
- Heat the olive oil in a pan over a medium-low heat. Add the garlic, stirring frequently, for a few minutes until golden. Do not let it brown else it will become bitter.
- Put the potatoes into a bowl, add the garlic and the oil from the pan, and mix well.
- Sprinkle with the cumin and mix again.
- Put the potatoes under the grill for 5 minutes.
- Put the potatoes into a serving dish, sprinkle with salt, mix well, and garnish with a chilli.
- Serve immediately.
