Shrimp Salad in Cumumbers

Shrimp Salad on Cucumbers These bite-sized snacks are ideal for a quick and easy dish to share out among friends and family.

Ingredients
  • 6 cucumbers
  • 75g cream cheese
  • 2 tbsp lemon juice
  • 125g cooked shrimp
  • 100g red pimiento peppers, chopped
  • 8 peppermint leaves, chopped
  • Paprika, to taste
  • Salt and pepper
 
Recipe
  1. Using a teaspoon, scoop out the seeds and flesh from the centres of the cucumbers, and place these vertically on a platter.
  2. Mix the cream cheese and lemon juice together in a medium bowl.
  3. Set aside 8 shrimp, then add the others to the cheese together with the pepper and mint and mix well.
  4. Season with salt, pepper, and paprika to taste and mix well.
  5. Using a teaspoon, fill the cucumbers with the mixture, then garnish the platter with reserved shrimp and serve.
