Shrimp Salad in Cumumbers
From 'Mexico The Cookbook' by Margarita Carrillo Arronte These bite-sized snacks are ideal for a quick and easy dish to share out among friends and family.
Ingredients
- 6 cucumbers
- 75g cream cheese
- 2 tbsp lemon juice
- 125g cooked shrimp
- 100g red pimiento peppers, chopped
- 8 peppermint leaves, chopped
- Paprika, to taste
- Salt and pepper
Recipe
- Using a teaspoon, scoop out the seeds and flesh from the centres of the cucumbers, and place these vertically on a platter.
- Mix the cream cheese and lemon juice together in a medium bowl.
- Set aside 8 shrimp, then add the others to the cheese together with the pepper and mint and mix well.
- Season with salt, pepper, and paprika to taste and mix well.
- Using a teaspoon, fill the cucumbers with the mixture, then garnish the platter with reserved shrimp and serve.
