Quesabirria Kit
This kit includes the main ingredients that you need to make delicious authentic Mexican Quesadillas Birria. It includes everything from different dried Mexican chillies, chipotle peppers in adobo sauce, corn tortilla wraps,
Mexican oregano and to give it an extra kick, we added a spicy red habanero hot sauce from El Yucateco!
Quesabirria Recipe:
Slice 30g each of Ancho, Arbol and Guajillo chillies. Remove the seeds then lightly toast with 5g cumin seeds and 5g cloves. Rehydrate with 200ml water then add to a blender with 200g chipotles in adobo sauce, 1 onion, 4 garlic cloves and 1 TBSP Mexican oregano.
Give your short ribs some colour by frying them for a few minutes on each side then add your sauce. Go in and add 400g chopped tomatoes, 400ml beef stock and then 2 cinnamon sticks and 4 bayleaves. Simmer for 4 hours on low heat then shred. Assemble with your La Fonda corn tortillas and add whatever toppings you like!
