Pan de Manteca

Pan de Manteca A butter bread from a simple dough that is easy to shape, allowing you to present it in many different styles; but this recipe is for a lattice-grid look.

Ingredients
  • 150ml milk
  • 500g plain flour
  • 5 tbsp sugar
  • 300g butter
  • 2 eggs
  • 3¼ tbsp active dry yeast
  • 1 tsp salt
    • To Glaze
  • 1 egg
  • A pinch of salt
  • A pinch of sugar
 
Recipe
  1. Put the milk into a small saucepan, bring to a boil, then let cool and set aside.
  2. Combine the flour, sugar, yeast, eggs, salt, and milk in a blender and beat for 10 minutes.
  3. Add the butter and mix for another 5 minutes, then let rest for an additional 10 minutes.
  4. Preheat the oven to 190°C. Line a baking sheet with parchment paper.
  5. Make a ball of the dough and cut it in half. Divide each half into 3 pieces.
  6. Take a piece of dough and roll it so it measures 15cm. Twist the strip; one end clockwise and the other anti-clockwise. Put the strip on a baking sheet. Repeat this twice more, leaving 3cm between the strips.
  7. Make 3 more strips and put them in the opposite direction, then braid the strips so that they form a lattice, leaving space for the dough to expand during cooking.
  8. To make the Glaze; combine all the ingredients with 1 tablespoon water and mix well, then glaze the dough.
  9. Bake for 15 minutes or until lightly browned.
  10. Remove from the oven and let cool on a wire rack.
