Ground Beef Mix:
- Beef round, eye, or top
- Fine salt
- Ground black pepper
- Smoked paprika
- Onion powder
- Garlic powder
- White sugar
- Mustard powder
- Prague powder #1
Jalapeño Cheddar (for 1/3 of the ground beef mix):
- El Yucateco Jalapeño Hot Sauce
- High temp cheddar cheese cubes
- Water
Honey Habanero (for 1/3 of the ground beef mix):
- El Yucateco Red Habanero Hot Sauce
- Honey
- Water
Black Label & Bourbon (for 1/3 of the ground beef mix):
- El Yucateco Black Label Reserve Hot Sauce
- Bourbon (for legal alcohol consumption age)
Tools & Supplies:
- Smoked collagen casings (17mm to 21mm)
- Meat grinder and sausage stuffer
- Wood chunks for smoking (preferably hickory, oak, or pecan)
Preparation:
- Preheat smoker to 130°F.
- Slice beef into 1-inch thick strips, freeze for 45 minutes.
- Combine seasoning ingredients; toss with slightly frozen beef.
- Grind beef strips, divide into 3 portions for flavors.
- Mix respective ingredients for each flavor.
- Stuff casings and follow the smoker's instructions.
- Smoke until internal temperature reaches 165°F.
- Immerse in ice water for 10 minutes to stop cooking.
- Cut to desired length and serve these flavor-packed beef sticks.
