WHAT IS CHARANDA?
Charanda is a traditional and lesser-known distilled spirit that originates from the state of Michoacán, Mexico. It is crafted from sugarcane, making it a type of rum, but with its own unique production methods and flavour profile.The production of Charanda begins with the harvest of sugarcane, which is then crushed to extract its juice. The juice is then fermented, typically using wild yeasts, which contribute to the distinctive flavours and aromas of charanda. The fermentation process allows the sugars in the juice to convert into alcohol, forming a liquid known as "mosto."
Following fermentation, the mosto is distilled at least once in copper stills, a crucial step in refining the spirit and enhancing its flavours. The distillation process helps to purify the alcohol and remove impurities, resulting in a smoother and more complex spirit.
One distinguishing characteristic of charanda is the use of copper pot stills in its production, which are believed to impart unique flavours and characteristics to the final spirit. This sets charanda apart from other rums that are typically produced in column stills.
Charanda exhibits a wide range of flavours and aromas, which can vary depending on factors such as the specific production methods, aging process (if any), and the expertise of the distiller.
