Ingredients

  • 4 chicken thighs or breasts
  • 2 tablespoons El Yucateco Chilmole paste
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 tomato, chopped
  • 2 cups chicken broth
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Vegetable oil
  • Fresh cilantro for garnish

Cooking Steps

  1. Soak and rinse the rice. Dissolve the achiote paste in hot broth for a richly flavoured base.
  2. Sauté onions in oil, add rice and carrots and cook until golden brown.
  3. Pour in the vegetable juice and achiote-infused broth, followed by tomatoes and peas.
