Ingredients:

For the Stuffed Sweet Potatoes:

  • 4 medium-sized sweet potatoes
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Marisquera Red Shrimp:

  • 500g large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

For the Avocado Salsa:

  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

For the Marisquera Red Drizzle:

  • 120ml El Yucateco Marisquera Red Sauce
  • 2 tablespoons Greek yogurt
  • Juice of 1 lime

For Garnish:

  • Fresh cilantro leaves
  • Lime wedges

Instructions:

Roast the Sweet Potatoes:

  1. Preheat the oven to 200°C (180°C fan).
  2. Wash and scrub the sweet potatoes. Rub them with olive oil, salt, and pepper.
  3. Place them on a baking sheet and bake for 45-60 minutes or until tender.

Prepare the Marisquera Red Shrimp:

  1. In a pan, heat olive oil over medium-high heat.
  2. Add peeled and deveined shrimp, ground cumin, smoked paprika, salt, and pepper.
  3. Cook for 3-4 minutes until the shrimp are opaque and cooked through.

Make the Avocado Salsa:

In a bowl, combine diced avocados, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper. Gently toss to combine.

Create the Marisquera Red Drizzle:

In a small bowl, whisk together El Yucateco Marisquera Red Sauce, Greek yogurt, and lime juice.
